To the surprise of many gardeners who know the Estragon plant, they're a part of the Sunflower family. These plants (also called Tarragon) have long, light green leaves and can grow to be a few feet high and with just one plant will generate a generous amount of leaves to pick. There are 2 types of Estragon; the French and the Russian. They can do well in full sun if you don't live somewhere too hot, but otherwise, select somewhere that will provide dappled or early morning sun only.
