Chicory herbs are perennial plants that has lots of benefits and use aside from having wonderful blue/white flowers. It's sometimes used as a coffee substitute wherein its roots are baked and roasted then used as an additive. Chicory leaves, despite having a bitter taste, is used in some cuisines and also as a spinach substitute. Other than that, chicory can also be used in traditional medicine, by way of Bach flower remedies.
